Spicy Sweet Potato and Poached Egg Toast

Sweet potato and kale hash toast topped with fresh avocado, poached eggs and spicy Tabasco sauce! Certainly starting my long weekend off with a kick (read: Tabasco is mighty hot, friends!). Keep reading for this simple and tasty recipe.

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20-25 minutes


1/2 sweet potato

2 slices of rye Ezekiel or sprouted bread

1/2 cup kale (or spinach!)

1/2 avocado

2 eggs

Tabasco sauce

dried parsley flakes

dried thyme

salt & pepper


In a medium size skillet, melt coconut oil down on medium heat to grease the pan. Peel skin from sweet potato before using a cheese grater to grate half of the potato into the hash. Add sweet potato and kale into the pan, being sure to move it around and prevent it from burning. Season with salt, pepper, dried thyme, and dried rosemary. Trust me when I say these seasonings change the way you eat sweet potato!!!

While hash is cooking, bring a small sauce pan to a simmer. Using a large spoon, stir water in a clockwise direction before dropping the egg into the middle of the pan. The movement of the water helps to wrap the egg white around the yolk and ensure a perfect poached egg! Cook for 2-3 minutes before repeating for second egg. While you are cooking the eggs you can put the toast in the toaster oven.

By the time the toast and eggs are finished, the hash should be cooked all the way through and the kale wilted. Top the toast with hash, followed by sliced avocado, egg, and Tabasco sauce (this is optional, of course).


And that’s it! I have been incorporating more Tabasco sauce and spices in general to my meals lately. It is proven that spicy foods can give your metabolism a boost and even suppress your appetite to prevent over eating! Not to mention the added flavor it brings to any otherwise simple recipes you may make. Never underestimate the power of spices and seasonings, they can truly make or break a dish!
