Strawberry Chia Seed Smoothie

Hello my friends! It is a gloomy weekend here in my neck of the woods, and so this morning I decided I wanted to brighten up my breakfast. This delicious strawberry chia seed smoothie was born, and I am super pleased with how it turned out. I am a firm believer that the quickest and easiest way to get your fruits and veggies in is through a smoothie. It’s easy to fall into cooking ruts where the last thing you want to do is cook or prepare a meal. Enter: the blender. Smoothies like this one require little to no prep time and all you really have to do is toss the ingredients in and press a button. Which I get it, even that can be difficult some mornings, but hear me out this is definitely a smoothie you need to try.


1 frozen banana

1 handful frozen mango

4 large strawberries

almond milk

rolled oats

chia seeds

1 sliced kiwi (optional)


The night before:

In a small seal-able container, prepare chia seeds overnight. I eyeball most of my meals, but for those who have never prepared chia pudding, all you need are your chia seeds and almond milk. I usually keep some prepared at all times because it is so simple! I poured enough seeds to cover the bottom of the container and filled it with about 1/4 of milk or until the seeds began to float on the top. The more milk you add, the more runny the pudding will be, so prepare to your preference! Let the pudding to sit overnight and allow the chia seeds to absorb the almond milk. In the morning the mixture will have thickened and the seeds will be puffy and soft.

The morning of:

In your blender, combine 1 frozen banana, 1 handful of frozen mangoes, 4-5 large strawberries (you can always add more!), 1 handful of rolled oats (or protein powder), and a splash of almond milk. I always add a little bit of milk at a time to ensure I get the consistency I want; much easier to add than to take away!

Once the mixture is combined, start to prepare your bowl. I like to use glass because you can see how beautiful the smoothie looks (you know, ~aesthetics~), as well as add fruits to the sides like I did here with the kiwi. If you do not like kiwi, feel free to add whichever fruit you like! First, pour the chia pudding into the bottom of the glass. You can also pour the strawberry mixture in first, totally your preference! I like to separate the layers with fruit, though, so I always pour one at a time. In order to get the kiwi to stick to the inside of the glass, I sliced them thin and pressed them flush to the inside of the glass. No matter which fruit you decide to use, the key is to slice them thin so that they can properly bend with the shape of the glass to prevent any air or smoothie from getting between the two.

Once the inside of the glass is lined with the kiwi, pour the remaining mixture on top. You can also add another layer, or create an ombre’d effect. I plan on doing a blog post about ombre’d smoothies very soon so be on the lookout for that!

As far as toppings, you have total freedom here. I like to add shredded coconut or more fruit to mine, but today I just left it plain. You can enjoy this with a spoon or a straw, it all depends on how thick you prepared yours! And that is it, an easy and delicious breakfast smoothie to start off the day. You can also add protein powder in place of the oats if you desire!   1. This looks beautiful! Am always on the search for new breakfast ideas, so this one is definitely going on the list. If I forget to soak the chia seeds overnight, do you know if soaking them for about an hour is enough time?

    1. Usually not, it takes a surprisingly long time for the them to absorb the milk, but if that’s the case the smoothie is delicious all on its own 🙂
