Looking for a quick and easy meal to prep for the week? This simple 5 ingredient stir fry is not only fast and simple, but delicious and filling. It offers a healthy alternative to traditional fried rice, and curbs any Chinese food craving without the added sugars and oils. You can also add egg to this recipe if you wanted to add another level of flavor and texture!
1/2 cup of quinoa, cooked
1/2 cup of shrimp, cooked (or chicken!)
1 bag of frozen peas
2 carrots, diced
1 onion, diced
First, cook 1/2 cup of quinoa in 1 cup of water. Bring to a boil and then reduce to low heat until the quinoa is light and fluffy.
In a large skillet, cook the shrimp and drain before tossing them back into the pan with some olive oil. Add the diced carrot and onion and brown them up before adding the cooked quinoa, mixing everything together with a little salt and pepper.
Last, add the frozen peas, mixing until they are thawed and cooked through. Once everything is done, serve with soy sauce and enjoy!
If you are cooking this stir fry with chicken, bake the chicken breast first for 20 minutes at 375 F and shred with a fork before mixing it in with the quinoa and veggies.
This is the perfect lunch recipe, though I love it for fast dinners too! I store individual servings in freezer safe baggies (labeled with the date!) to have ready for the week and if I don’t end up eating all of it I will simply toss it in the freezer for later. Perfect for those of us who don’t always time time to cook during the week.
