I am a huge sucker for pancakes but for the past few years I have avoided eating them due to all those questionable characters in their ingredient list. I have tried banana pancakes to no avail (turns out banana and egg mixed together just makes soup for me) and was searching for a way to pack some protein into my breakfast on those mornings where I’m short on time. These take 5 minutes to whip up and keep you feeling full all morning, not to mention flax seeds are high in fiber, essential fatty acids, and contain 6 grams of protein per serving, which makes these a perfect post workout meal.
These pancakes are heartier than your traditional pancake, but it is easy to add your favorite fruits, sweeteners and toppings to this base recipe to change it up. The base requires only 7 ingredients and can be mixed together in minutes. These pancakes also cook nice and fast so you won’t be waiting long for them to come off the pan and onto your plate. I added blueberries this time around but you can also add in a banana, sliced strawberries, any nuts of your choice or even some coconut flakes to make it interesting. I also doubled up this recipe to make 3 larger pancakes!
1/4 cup flaxseed meal
1 tablespoon of water (or milk of your choice)
1 teaspoon vanilla extract
1 teaspoon baking powder
pinch of salt
pinch of cinnamon
pinch of nutmeg
fruit of your choice
- In a medium size bowl, combine all ingredients with a fork. The mix should have no lumps but be thick in consistency.
- Pour into a greased pan (I used coconut oil) and press the blueberries into the top of the pancake, waiting until bubbles start to poke through the top of the pancake before flipping. Each pancake should take no more than 2 minutes to cook on medium heat.
- Serve with additional blueberries, shredded coconut, and maple syrup!
